A food allergy is condition in which an individual’s immune system mistakenly identifies a harmless food protein, or allergen, as a threat. In reaction, the immune system produces abnormal amount of the IgE antibody, which release histamine and other chemicals and leads to an allergic reaction. Allergic reactions can range from mild symptoms, including hives, eczema and skin redness, to severe symptoms. Severe symptoms include shortness of breath or wheezing, trouble swallowing, obstructive swelling of the lips, tongue, and/or throat and the potentially life-threatening condition known as anaphylaxis.
