1 large kumara, , 2 tsp oil, 2 tsp paprika, 1/2 cup ricotta, 50 grams feta, 1/2 capsicum, lemon juice, pinch chili, herbs of choice

Peel and slice kumara, spray oil on top and add paprika. Cook in oven for 20 mins, turning half way. Add capsicum to roast about 10 mins. Set aside to cool. In bowl mix ricotta and feta, add lemon juice . Place ricotta mixture on top of kumara, add roasted capsicum and sprinkle with chili powder. Add herbs such as parsley. And enjoy.
