Do you have any go-to quick recipes for those nights when you just can't cope?

Here are a few things I have relied on:
1. Vegetarian Chili: Dump a can of beans, a can of tomatoes, a small can of corn, some chili or taco seasoning, and salt and pepper into a pot and heat through. Serve as is or with toppings like sour cream, cheese, green onions, and tortilla chips.
2. Scrambled eggs and toast: this is a go to for me if I am specifically needing some fast protein. If I feel up to it, I add some spinach or herbs to the eggs. I might have an orange as "dessert" to balance out the food groups.
3. Instant noodles with add ins: I will prepare the noodles according to the instructions and then add whatever I have in the fridge - spinach, cilantro/coriander, tomato, cucumber, zucchini, etc. Then I fry an egg to serve on top. If I feel extra fancy, I'll also sprinkle some toasted sesame seeds on it.
4. Yogurt with chia, ground flax, hemp, fruit, and granola: this is fairly self- explanatory, but I usually let it sit for ten minutes so the chia and flax can absorb the liquid. You can use canned fruit, fresh fruit, frozen fruit, or even jam. I only buy plain yogurt, so the fruit is an important addition for me, but if you have flavoured yogurt, you could skip that step.
